The Strawberry Moon surprised me last night. Like an unexpected visit from a dear friend. I caught the sweet smile on her glowing face from the corner of my eye as she rose over the ridge. An early evening at the dawn of summer- the air was warm, and fresh, and inviting. The full moon shone a rose-gold in the pink sunset sky and something about the whole atmosphere seemed so hopeful, so sweet, and so light. Nothing could be more fitting than the name of the moon this month. The Strawberry Moon or Rose Moon brings with it the expectation of bright, happy days. Summer is finally here!
What better way to celebrate the Strawberry Rose moon than to bake summery sweets? This time of year I start to feel the nostalgia of French summers wash over me. Memories of those long, sunny days where the country seems to live al fresco on their patios and terraces dining and relaxing. Ripe fruit takes center stage and once again I feel that familiar craving for rustic French galettes, gleaming tartes, and mini tartelettes piled high with the bounty of warm days.
I brought the memories to life with a vegan twist as a great way to kick off the first week of summer! A classic French tarte with vanilla custard and huge, sugary strawberries was the star of the show. Secondly, I made some rustic French galettes with a mixture of strawberries, raspberries, rose petals, apricots, and peaches. Finally as the perfect finishing touch- mini gluten-free strawberry cream tartelettes piled with berries and topped with flowers. As much food for the eyes and heartwarming to the soul as they were tasty. I can’t recommend these desserts enough! Happy summer everyone!
